Our kits have a long shelf life. You can order months ahead of time. Store the kit away from moisture and out of direct sunlight. Each kit has a printed best before date. Contact us if you require shelf life of over six months and we will advise the best option for you.
Please store the cake in the fridge and bring to room temperature before eating. For detailed explanations on how to store the cake through every stage from baking to completion, please see instructions inside your kit.
Once assembled, the cake will keep in the fridge up to a week. It will be at it's best for up to two days. While it is perfectly safe to eat beyond that, it may start drying out slightly with time. This is especialy true once the cake is cut. Please remember to keep the cake well wrapped or in a sealed container to minimise it drying out.
It is very important to bring the cake to room temperature before eating, as both the cake and buttercream are at their best at room temperature. Cold cake will taste dry and buttercream will be hard.
Yes, cake can be safely frozen for up to three months. Once assembled, cake should be portioned, well wrapped, labelled with the date and frozen in slices. Thaw in the fridge overnight and bring to room temperature before eating.
Individual components can also be frozen separately for up to three months before assembly. If freezing individually:
- Triple wrap each baked cake layer in cling wrap and label with the date before freezing. Thaw in the fridge overnight before using.
- Store made buttercream in a zip lock bag or freezer safe container. Label with the date before freezing. Thaw in the fridge overnight and bring to room temperature before using.
Once taken out of the freezer, assemble the following day if components were frozen individually. Consume within three days.
Once made, Swiss meringue buttercream will keep in the fridge for one week. It can also be frozen for up to three months. Thaw in the fridge overnight and bring to room temperature before eating. Once defrosted, consume within three days.
Any leftover buttercream can be used to frost cupcakes, on pancakes, scones, sponge cake, the list goes on!

The most important thing when transporting a buttercream cake:
THE CAKE MUST BE WELL SET IN THE FRIDGE BEFORE TRANSPORTING!
DO:
- If possible, package the cake in a cake box. If a cake box is not an option, loosely wrap the cake in cling wrap. If the cake is well set, the cling wrap will not damage the cake.
- The safest place for the cake to travel is the boot. Yes, the boot! Clear the boot of loose item that can fall on the cake in transport. Place a non slip mat under the cake box or cake board so it does not slide around. Alternatively, place the cake on the floor of the car (in front of the passanger's seat is ideal).
- Remember that the cake needs to come to room temperature before eating. Once you arrive at your destination, if the cake is going to be eaten in two to three hours, leave it out of the fridge away from direct sunlight and heat. If the cake will not be eaten for a prolonged period, refrigerate and take out of the fridge at least two hours befre eating, depending on the season and temperature. Winter or well air conditioned rooms may need more than two hours. No air conditioning and summer temperatures may need less time.
DO NOT:
- Holding the cake in your hands or lap is very risky and not advisable. The cake has a much higher chance of falling or toppling this way. Trust us!
- Please do not leave your cake in a parked car for prolonged periods as cars heat up quickly without the air conditioning running.
